Breaking news, friends. I am now officially out of blueberries. In a summer that has seen a seemingly endless stream of beautiful berries, I wasn’t sure this day would ever come. But, after making plenty of bars and bread and cheesecake and cake and even a couple of batches of jam, I’ve exhausted the last of my blueberries with this crisp.

And, what a way to go!

Blueberry crisp on its own is a perfectly delicious dessert. But, underneath that traditional crisp is a sweet cream cheese layer that really makes it something special. Blueberries and cream cheese go together so very well, don’t they?

Blueberries and cream cheese are perfect companions in this Blueberry Cream Cheese Crisp.

And that topping! I’m such a sucker for crumb toppings. This is a good one, with plenty of brown sugar and just enough cinnamon. I opted to add some chopped pecans, and I really like the crunch it adds.

There’s a rustic feel to most any crisp or cobbler. This one is no exception, and it definitely tastes better than it looks. This may not be the prettiest dessert you’ll ever make, but it will be among the tastiest.

Yield: 8 to 10 servings

Blueberry Cream Cheese Crisp

Ingredients

For the cream cheese layer:
8 ounces cream cheese, softened
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1 large egg
1 teaspoon vanilla extract
For the topping:
1 pint blueberries (2 & 1/2 to 3 cups)
1/4 cup granulated sugar
1 tablespoon lemon juice
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold unsalted butter, cut into 1/2-inch pieces
1/3 to 1/2 cup chopped pecans
Instructions

To make the cream cheese layer:

Preheat oven to 325°. Grease an 11" x 7", 8" x 8", or 9" round pan.

Using an electric mixer on medium speed, beat cream cheese, sugar, and flour until well-blended and smooth. Add egg and vanilla, and mix until combined.

Spread mixture evenly into the bottom of prepared pan. Bake 15 minutes, or just until set. Set pan aside while you prepare the topping.

To make the topping:

Increase the oven temperature to 375°.

Place blueberries in a medium bowl. Add granulated sugar and lemon juice, and toss to coat. Set aside.

In a separate bowl, mix flour, brown sugar, and cinnamon. Add butter and mix with a pastry blender or fork until combined. Dough will be crumbly. Add pecans and toss to mix.

Pour blueberry mixture over cream cheese layer.

Sprinkle crumb mixture evenly over blueberries.

Bake 22 to 25 minutes, or until the top is lightly browned and the blueberries are bubbly.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
In a large bowl, stir together cake mix, pudding mix and sugar. Make a well in the center and pour in water, oil, eggs and cream cheese. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in the blueberries. Pour batter into prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Make Glaze: In a small bowl, combine confectioners' sugar with 2 tablespoons reserved juice from the blueberries. Drizzle over cooled cake.

Ingredients
Cooking spray
1 cup all-purpose flour
1 cup whole-wheat pastry flour or regular whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/2 cup chopped walnuts
1/2 cup packed brown sugar
2 tablespoons butter, at room temperature
2 tablespoons canola oil
2 large eggs
1 teaspoon vanilla extract
1 cup plain nonfat yogurt
1 cup fresh blueberries, or frozen and thawed
Directions
Preheat oven to 350 degrees F. Spray an 8-inch square cake pan with cooking spray.Preheat the oven at 160C, 325 F,gas 3.Baseline and grease two equally sized sandwich tins. Add the sugar and the butter to a bowl and whisk until very fluffy and a pale cream.
Wisk the eggs in a mug with a fork and then add them gradually to the mixture with 1 tbsp of flour each time. Make sure you don't use all the flour.
Add the rest of the flour and the baking powder to the mixture and fold it in gently.
Dissolve the coffee in the boiling water and add to the mixture still folding. Divide into the sandwich tins and cook for 30 minutes
Meanwhile Cream the butter and the icing sugar until light and fluffy. Dissolve the coffee in boiling water, making sure you don't add too much water or the icing will be runny and add it to the butter and icing sugar. Whisk and leave in the fridge until the cake is done.
Once the cakes are done and have been put onto plates spread the icing on the bottom of one of the cakes (leaving around half of the icing for the top) and spread the strawberry jam ont the bottom of the other. Spread the remainig icing ontop of the cake. decorate with cherries or walnuts. ENJOY!
Whisk together the all-purpose and whole-wheat flours, the baking soda and salt. In a small bowl, stir together the granulated sugar, cinnamon and walnuts. In a large bowl, beat the brown sugar, butter and oil until fluffy. If necessary, use the back of a spoon to press out any lumps in the brown sugar. Beat in the eggs, 1 at a time, beating until fully combined. Beat in the vanilla and yogurt.
Add the flour mixture in 2 batches, stirring until just combined.
Spread half of the batter into the prepared pan. Sprinkle half of the nut mixture over the batter and top with the blueberries, gently pressing them into the batter. Spoon the rest of the batter into the pan, smoothing the top. Sprinkle the remaining nut mixture over the cake, pressing gently. Bake until a wooden toothpick inserted in center comes out clean, about 30 to 35 minutes. Let cool slightly and then unmold and allow to cool completely on a cooling rack. Cut the cake into 2-inch squares.
Per Serving
In a bowl, beat the butter and sugar together until very light and pale.
Add the eggs one at a time to the butter and sugar mixture, beating well to completely incorporate each egg before adding the next egg.
Add the espresso to the mixture and stir well.
Add the flour and walnuts and stir well to completely combine.
Spoon the cake mixture into two lined and greased 20cm/8in cake tins.
Transfer to the oven to bake 25-30 minutes, or until a skewer inserted into the centre of the cake comes out clean and the cake is golden-brown.
Remove the cakes from the oven and leave to cool on a wire rack.
For the buttercream topping, beat the butter and icing sugar together in a small bowl until pale and light.
Add the espresso and mix well.
Spread the buttercream over the top of each cake, then place one cake on top of the other.
Decorate the top of the cake with the walnut halves and serve in generous slices.

INGREDIENTS

FOR THE CRUST
1 disk Pate Brisee
All-purpose flour, for surface
FOR THE FILLING
4 medium ripe but firm peaches (about 1 1/3 pounds)
2 large eggs
3/4 cup sugar
1/2 stick unsalted butter, melted
3 tablespoons all-purpose flour
Pinch of salt
DIRECTIONS

Preheat oven to 375 degrees. Make the crust: Roll out pate brisee to a 1/8-inch thickness on a lightly floured surface. Fit dough into a 9-inch pie plate, and trim crust to a 1-inch overhang using kitchen shears. Fold edges under, and press to seal using the tines of a fork. Prick bottom of pie all over with fork. Freeze for 15 minutes.
Line crust with parchment, leaving an overhang on all sides. Fill completely with dried beans or rice. Bake for 20 minutes. Remove from oven; remove beans and parchment. Bake crust until bottom is lightly golden, about 11 minutes more. Let cool.
Meanwhile, make the filling: Bring a pot of water to a boil. Prepare an ice-water bath. Cut a small X into the bottom of each peach. Boil for 1 minute; transfer to ice-water bath. Let cool slightly. Peel and pit peaches. Halve 7 of the 8 halves to form wedges.
Whisk together eggs, sugar, butter, flour, and salt. Pour filling into pie crust. Place peach half in center, cut side down, and surround with wedges.
Bake for 45 minutes. (Tent crust with a foil ring after 15 minutes.) Transfer to a wire rack; let cool for 1 hour. Refrigerate for at least 1 hour before serving.Preheat oven to 350 degrees F (175 degrees C).
Arrange peaches evenly in an 8x8-inch baking dish.
Mix flour, brown sugar, butter, cinnamon, and salt in a bowl using a pastry cutter until evenly crumbled. Fold oats into flour mixture; sprinkle and press topping into peaches.
Bake in the preheated oven until topping is lightly browned, about 30 minutes.For the topping:
1Heat the oven to 425°F and arrange a rack in the middle.
2Place all of the ingredients in a large bowl. With your fingertips, blend the butter pieces into the dry ingredients until large clumps form and the flour and butter are completely incorporated, about 3 minutes. Crumble the clumps into small pieces the size of kidney beans, then refrigerate the streusel while you make the filling for the pie.
For the filling:

1Place the brown sugar, lemon juice, cornstarch, vanilla, and salt in a large bowl and whisk to combine. Add the peaches and stir until evenly coated.
2Transfer the mixture to an 8-by-8-inch glass or ceramic baking dish and arrange it in an even layer. Sprinkle the reserved topping evenly over the peaches.
3Bake until the topping is browned and crisp, about 20 to 25 minutes. Place the dish on a wire rack to cool for at least 30 minutes before serving.

1 cup chawal ka atta 

2 Tbsp ghee 

1 cup gur ki shakkar 

1 tsp meetha soda 

2 Tbsp white sesame seeds (safed til) 

1 tsp saunf - coarsely powdered 

2 Tbsp dahi 

Ghee - to deep fry
Method
Rub ghee into the rice flour. 

Mix in the shakkar, soda, sesame seeds, saunf and dahi and knead into a soft dough.

Cover and keep aside for about 20 minutes. 

Shape the dough into balls.

Heat ghee.

Lower the heat to medium and fry the balls till crisp and cooked through. 

Serve hot, or store in airtight containers after they have been cooled to room temperature.Anarse ki Goli

Ingredients

1 cup rice (Idly Rice)

1/2 cup sugar

2 tbsp white seasame seeds

1 tbsp milk

ghee – for deep fry

Recipe (How to make anarse ki goli)

Clean and wash the rice and soak for atleast 2 days and change water every day two times.

On 3rd days drain the water and Spread the rice on a cotton cloth and let them dry in

Now grind the rice and keep aside.

Grind the sugar and mix with rice flour add 1 tbls milk and make hard dough and keep it for 24 hours.

After 24 hours mix seasame seeds and make small bolls.

Now heat oil in a deep fry pan now put this boll in the hot ghee and fry light brown on medium flame you can fry 8-10 balls at a time.

Prepare all the anarase ki goli by this method.

After cooling down store in airtight container.

And serve hot or cold anarse ki goli in this festive season.Rub the 2 tbsp ghee into the rice flour. Mix in the shakkar, soda, sesame seeds, saunf and dahi and knead into a soft, roti-like dough with the help of water. 

Cover and keep aside for 15-20 minutes. Shape the dough into rounds. 

Heat ghee and when a little piece of dough thrown in comes up at once put in as many balls as come in without touching each other. Lower the heat to medium and fry till crisp and cooked through. 

Serve hot, or store in airtight containers after they have been cooled to room temperature.
