Rabdi is a perfectly proportioned combination of milk and sugar, thickened in a broad-bottomed vessel. When making rabdi, it is very important to keep scraping the sides of the pan at all times, otherwise the sides will burn. Moreover, if you forget to scrape the sides, the rabdi will also not become thick as the scraping of sides is what thickens the rabdi. In this book, i have used rabdi to make carrot crêpes with rabdi and other such delights.

Ingredients
2 1/2 cups full-fat milk
1/4 cup sugar
Method
Heat the milk in a kadhai on a medium flame till it comes to boil.
Simmer and cook for approx. 20 to 25 minutes or till the milk reduces to ½ its quantity, while stirring and scrapping the sides of the pan continuously.
Add the sugar and simmer for another 20 to 25 minutes or till the milk thickens.
Use as required.

Besan Laddoo Recipe

Ingredients 
500 gms besan
1 kg powdered sugar; 
250 gms ghee 
10 gms cardamoms.

Method
1) Heat ghee. Add gram flour and fry. Remove pan from fire. Cool. 
2) Add powdered sugar. Mix well. Add crushed cardamoms. 
3) Form into even-shaped balls. 
4) Sticky sugar syrup can be prepared and the fried gram flour can be added to it and then prepared into balls, if desired.

Muesli Laddoo Recipe
Ingredients 
2 cups muesli
3/4 cup wheat flour
3/4 cup powdered sugar 
150 gms peanut butter 
8 to 10 chopped dates

Method 
1) Roast the muesli lightly so that it gets warm. Also roast the wheat flour. 
2) Mix together muesli, wheat flour, powdered sugar and chopped dates. 
3) Now add the peanut butter little by little and make into laddoos. It helps to make the laddoos when the mixture is warm. Cool it and store.  
Tip: This makes a excellent mithai for people who are restricted from having high calorie ghee. (Peanut butter is a healthier substitute for ghee.)

Cheesy Laddoo Recipe

Ingredients
½ cup paneer
½ cup khoya (or fine ricotta cheese) 
3 tbsp sugar
1/2 tsp vanilla or cardamom powder
Chopped nuts for decoration

Method
1) Knead the paneer very well so that no lumps are left. 
2) Next sieve the khoya and mix it with paneer. 
3) Add sugar, vanilla or cardamom, and mix very well. 
4) Make small laddoo and decorate with chopped nuts. Keep in refrigerator until ready to offer.

Both of these are super easy to make and hardly takes 10-15 minutes each...Yes!! 15 minutes!!!

For the Jaggery Peanut Brittle
200 gms of Jaggery
1 & 1/2 cups of peanuts
1 tbsp fennel seeds
2 tbsp ghee (clarified butter)
1/8 cup water

Method:
1. Dry roast the peanuts lightly in a pan and keep aside. You can break the peanuts in half.
2. Heat water and add jaggery to it on medium heat. Jaggery will start to melt.
3. Add ghee and keep stirring. All the jaggery will melt and the mixture will look like a smooth paste.
4. Add the fennel seeds and peanuts together and mix to coat the peanuts well.
5. Switch off the gas and pour the peanut mixture on a greased flat plate or baking sheet. Flatten it out into 1/4" thick slab.
6. Let it cool down completely. Once cooled, break it into pieces and enjoy!!



For the Sesame Sugar Candy
1/2 cup sesame seeds
1/2 cup sugar
1/8 cup water
1/4 tsp cardamom powder
1 tsp ghee (clarified butter)

Method:
1. Lightly dry roast the sesame seeds and keep aside.
2. Heat the water and sugar together.
3. Add in the ghee and cardamom powder.
4. As it boils, add the sesame seeds and mix. As mixture starts to leave the sides, switch off the gas.
5. Drop the spoonful of mixtures onto a greased plate/parchment paper and let them cool completely.
6. Once cooled, remove from the plate and store in airtight container.

Ingredients
400 gms condensed milk
3 cups besan (bengal gram flour)
2 tbsp milk
a few saffron (kesar) strands
1 cup ghee
chopped almonds (badam) and pistachios for garnishing
Method
Combine milk and besan well ,mix well and keep aside for 30 minutes.
Heat ghee in a pan, add the besan and saute for 12 minutes.
Add the condensed milk and cook with while stirring continuously for 15 minutes or till the mixture thickens.
Add the saffron, mix well and remove from the flame and pour the mixture into a greased plate and garnish with almonds.
Cool and cut into desired pieces.
