Gajar halwa or carrot halwa also known as gajrela. Even though it is North Indian dessert, I grew up eating it. My mom makes it very often during the winters. She usually makes halwa in the morning, I used enjoy warm halwa in the breakfast in cold wintery morning. Sounds weird, right? Yea but that’s the truth. But after moving to USA, I like to have it chilled. So I usually make in the afternoon and keep in refrigerator to chill. I and hubby have this as a dessert after dinner.


Traditional way of making gajar ka halwa takes lots of time. I have made only 2 servings and it took me about 40 minutes. But if you are making larger batch then it takes more time to evaporate milk and the whole process might take 2-3 hours. But after spending that much time. all the efforts are worth it.

As I said, I made smaller batch, so I use the box grater to grate the carrots. If making larger quantity then I would suggest using food processor for grating. Otherwise you will get good arm exercise.

There are other variation or methods of making gajar ka halwa (which is quicker than traditional one). I have already took the photos, will be posting soon.
1) Gajar halwa made in pressure cooker. took me only 20 minutes from start to finish.
2) Gajar halwa made with condensed milk. took me only 15 minutes from start to finish
I go for the any of the above two quicker methods, if I making it for guests (as I have to spend some time for making savories too)

This gajar halwa has three main ingredients: Carrots, milk and sugar. Apart from these, very little amount of ghee or clarified butter is required to saute the grated carrots. Cardamom powder is added for flavoring. And nuts and raisins are added for crunch.

Khoya can be added to gajar halwa to make it more rich and creamy. This time I have skipped the addition of khoya. If using knoya then add before adding the sugar, let it melt and then add sugar and proceed with recipe.

To make the best gajar halwa, always use sweet and juicy carrots. Those kind of carrots are only available during winters in India. But here in USA, we get good quality carrots all year around.

Carrot halwa can be made during festivals like Diwali, raksha bandhan, holi or any other, you just name it because everyone likes this halwa. It can be made on special occasions as well. I have seen carrot halwa in wedding menu as well.

Step by step recipe for gajar halwa:
1) Grate the carrots using box grater.

2) Heat the ghee in a pan on medium heat.

3) Once hot add grated carrots and saute.

4) Cook for 5 minutes, stir in between. You will get nice aroma of carrots.

5) Add milk and stir.

6) Bring it to a boil and let it simmer.

7) Milk will start to evaporate, don’t forget to scrape down the sides and also run the spatula to the bottom of the pan as well to make sure that it is not sticking.

8) All the mix will be evaporated and it becomes almost dry. It took me about 15-18 minutes. If making larger quantity then this might take more time.

9) Now add sugar and mix.

10) As sugar melts, halwa will become runny again.

11) Add cardamom powder.

12) Let it boil and all the liquid will dries out. It took me 10 minutes. then turn off the stove.

13) Lastly add almonds, cashews and raisins.

14) Mix well. Serve warm or chilled.

I like to have this halwa as such. But for fancy serving or to impress your special guest, serve warm carrot halwa topped with scoop of vanilla ice cream. You can warm up the halwa in microwave.

Ingredients
Ghee (Clarified butter) - 1 tablespoon
Carrot - 2 cups, grated
Milk - 2 cups
Sugar - ⅓ cup or more, as per your taste
Khoya - ⅓ cup, optional
Cardamom powder - ¼ teaspoon
Almonds - 1 tablespoon, chopped
Cashew nuts - 1 tablespoon, chopped
Raisins - ½ tablespoon
Instructions
Heat the ghee in a pan on medium heat. Once hot add grated carrots and sauté it for 5 minutes stirring in between or until you get nice aroma of carrots.
Add milk and let it come to boil. After that let it cook until all milk evaporates. Stir in between and scrap the sides otherwise it will give you hard time while cleaning the pan
Add sugar and khoya if using. Mix well.
Let it cook for 8-10 minutes or mixture becomes dry and leaves the sides of the pan. Add cardamom powder and mix. Garnish with almonds and serve.
Additional Info
Taste – Sweet with some grains of milk solids

Shelf life – once it comes to room temperature, you can keep refrigerated up to a week in air tight container. You can freeze it up to a month.


Serving suggestions – You can serve carrot halwa warm or cold. Serve as a sweet or dessert with your lunch or dinner. For fancy serving or to impress your guest, serve warm halwa with scoop of vanilla ice cream on top.
